Who doesn’t love french fries? My kids love all kinds of fries so I decided to mix it up a bit. I had a harvest of sweet potatoes and wanted to use them in meal planning. I have previously cooked twice baked sweet potatoes but I wanted something a bit more savory to accompany our protein (fried shrimp)…Crispy Sweet Potato Fries.
I have to admit, this is the first time I tried homemade cut fries but this recipe is super easy and delicious! Word of caution, the sweet potatoes made way more fries then my family of four could eat in one sitting.
The spices really make the fries and they can be adjusted based on taste. My daughter is not found of spicy so on one pan I used less cayenne pepper. The fries were the perfect pair with the fried shrimp and much healthier than being fried. I made a homemade garlic aeoli for dipping and my husband couldn’t put them down!
Crispy Sweet Potato Fries – Recipe
Crispy Sweet Potato Fries
- 1 large Sweet Potato
- 2 tsp corn starch
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 pinch cayenne pepper
- 2 tbsp olive oil
- salt to taste
Peel and cut sweet potato into strips.
Place the potato strips in a bowl of cold water and let them sit for 30 minutes.
Drain potato strips and pat dry with a towel. Place them in a bowl and add 2 tsp of corn starch. Mix until covered.
Place strips on baking sheet lined with parchment paper. Don't let them touch to much.
Drizzle the strips with olive oil and spices. Do NOT add salt at this point it will make them soggy.
Bake the fries for 35 minutes at 400º. This time will depend on the thickness of the fries.
Right before serving sprinkle the fries with salt.
